The most unusual dessert I’ve ever had was a modern Faroese concoction at Koks Restaurant in Torshávn, Faroe Islands.
Fresh cream cheese, sour cream foam, granite of champagne, tarragon sugar, raw cucumber and radish.
With unsweetened cheese, cucumber, and radish, it seems like a savory dish more than a dessert — but trust me, the tarragon sugar and granite of champagne absolutely transform this dish into a sweet masterpiece! Start from the middle and work your way out, making sure each bite has a bit of everything on the plate. It’s light, fresh, and absolutely stupendous.
