A palate cleanser is an important part of a multi-course wine dinner – especially if one is doing something unorthodox (like serving a white wine after a red wine or a fish dish after a meat dish.) Also it can be used to slow the consumption of alcohol and extend the duration of the meal. For example: if you are about to transition from the main red wine dish to the dessert, but you notice that the diners still have a lot of red wine in their glasses, a palate cleanser course can allow them to finish the wine and slow down the progression.
